Guidelines for how to cook raw meat, poultry, seafood, and other foods to a safe minimum internal temperature, always using a food thermometer to check whether meat has reached a safe minimum internal temperature that is hot enough to kill harmful germs that cause food poisoning.

The California Retail Food Code (CalCode) Section 114093 requires a “ConsumerAdvisory” for animal foods, including beef, eggs, fish, lamb, milk, pork, poultry, orshellfish served or sold raw, undercooked, or without otherwise being processed toeliminate pathogens, either in ready-to-eat form or as an ingredient in another ready-toeat food. A retail food facility permit holder shall inform consumers of the significantlyincreased risk of consuming such foods.
